This hearty, protein-packed golden soup is totally delicious!


1 tablespoon Olive oil
2 Onions chopped
2 Carrots chopped
3 Celery sticks chopped
2 Potatoes peeled and chopped
A handful of Cauliflower florets
4 Garlic cloves
1 tablespoon Ground ginger
400ml Coconut milk
800ml Chopped tomatoes
240ml Vegetable stock
1 tablespoon Turmeric
1 teaspoon Cumin
1/2 teaspoon Salt
1/2 teaspoon Pepper
200g Lentils
500g Spinach chopped
1 tablespoon Lemon juice


Place the oil, onions, carrots, celery, potato, cauliflower, garlic, ginger, milk, tomatoes, vegetable stock, turmeric, cumin, salt and pepper into a pot followed by the lentils and cook on high until bubbling then reduce to a simmer. Cover with a lid and stir occasionally until the veg becomes tender.

Stir in the spinach and lemon juice and serve!
