Chocolate Filled Doughnuts

A dreamy treat, filled with chocolatey goodness!
Place the flour into a bowl, add the salt and sugar on one side and the yeast on the other. In a jug, combine the water and melted butter, pour into the flour, add the eggs and combine using your hands until glossy and elastic.
On a clean work surface dusted with flour, knead the dough until stretchy and shiny. (This will take a while!)
Return to the bowl, clover with clingfilm, place in a warm place and leave to double in size. Knock the air out of the dough with a quick knead, return to the bowl, cover and place in the fridge overnight.
Tip the dough on to a lightly floured work surface and divide into 50g portions. Roll the pieces into smooth balls, place on an oiled baking tray and cover with clingfilm and leave to double in size.
Carefully heat the oil to 180C, very carefully lower two to three doughnuts into the oil one at a time. Cook until golden, turn and cook the other side until gold. Place the doughnuts onto kitchen towel to remove any excess oil. Leave to cool.
Place the chocolate and water into a pan over a low heat and melt. Place some ice and water in a large saucepan, place a smaller bowl on top, pour the chocolate mixture into the smaller bowl and whisk until you get a whipped cream texture.
Add to a piping bag, pierce a hole in the side of the doughnuts with a knife, gently push your finger inside to create a home for the chocolate and push the end of the piping bag into the hole and fill. Roll in coconut sugar and enjoy!
