Wash the spinach, leave to air dry, squeeze the spinach together using a spoon or your hands and add to a food processor with the spinach powder, flour and salt. Process until combined.
While the mixture is processing, add 4 egg yolks (one at a time) and some of the egg white until a dough forms.
On a clean work surface, knead the dough for 5 minutes, cover and leave for half an hour. Dust a clean work surface with flour, roll out the dough until paper thin and cut into tagliatelle noodles. Sprinkle the semolina on to the pasta and cook in boiling salted water for 3 to 5 minutes.
Now this is a winter warming, cosy soup for the soul!
