Enjoy layer upon layer of vegetable goodness in this scrumptious savoury tart recipe!



250g All purpose flour
2 1/4 teaspoon Salt
100g Butter
1 tablespoon Apple cider vinegar


500g Tomatoes sliced
180g Courgette sliced
2 Garlic cloves sliced
100g Firm cheese (asiago, cheddar or gouda) finely grated
1 Egg beaten
Sea salt to taste
Organic ground black pepper to taste
1/2 Lemon
1 tablespoon Organic chives



Pulse the flour and salt in a food processor followed by the butter until the mixture resembles coarse meal. Drizzle with vinegar and ice water and mix until a shaggy dough comes together.

Turn out the dough onto a clean worksurface dusted with flour and knead. Pat the dough into a ball and wrap in clingfilm. Place in the fridge for 2 hours.


Toss the tomatoes, courgette, garlic and 1 teaspoon of salt in a bowl. Leave for 5 minutes.

Roll out the dough onto baking paper, place on a baking tray and scatter cheese over the dough and arrange the veg on top.

Fold the edges of the dough over the veg, brush with the beaten egg and sprinkle salt and pepper on top. Freeze for 10 minutes.

Preheat the oven to 200C, sprinkle chives on top and place in the oven for 55 - 65 minutes or until golden brown and serve!
