In a large mixing bowl, cream the butter and sugar together until fluffy then beat in the eggs.
In a separate bowl, mix the flour and spices together, gradually add the butter mixture until a dough forms. Shape into a ball, wrap in clingfilm and place in the fridge for 1 hour.
Preheat the oven to 180C, on a clean work surface dusted with flour, roll out the dough and cut out pumpkin shapes. Place the biscuits on to a baking tray lined with baking paper and sprinkle with sugar and cinnamon. Bake for 12 to 14 minutes or until golden brown and leave to cool.
Combine the sugar and water together over a medium heat, once the sugar dissolves reduce the heat to low and add the pumpkin puree, milk, spices and salt. Mix together over a low heat for 2 minutes, remove from the heat and leave to cool.
Spoon the syrup on to half of the biscuits, sandwich a biscuit on top and leave to set.
Now this is a winter warming, cosy soup for the soul!
