Tip the yeast, sugar and 60ml of milk into a small bowl and mix together. Leave to stand for 10 minutes until foamy.
In a medium bowl, whisk together the remaining milk, butter, salt and eggs.
Add the flour to a large bowl and pour in the milk mixture followed by the yeast mixture and mix until well combined. Once you have a dough, turn out onto a clean work surface that's lightly dusted with flour and knead for 5 minutes until elastic and smooth and no longer sticky.
Coat a bowl lightly with oil, place the dough in the bowl and cover with cling film. Leave in a warm place until the dough has doubled in size (around 2 hours).
Line a baking tray with baking paper then divide the dough into 16 balls. Place the balls on the pan evenly apart, cover with a tea towel and leave in a warm place to rise for an hour.
Preheat the oven to 180C, place the oven rack just below the centre of the oven and brush the tops of the rolls with the egg yolk. Sprinkle sesame seeds on top and bake for 20 - 25 minutes until golden brown.
