These easy vegan friendly biscuits take no time at all to whip up and make the perfect Christmas gift!


120g Vegan butter
55g Sugar
180g Plain flour
Raspberry jam


In a large mixing bowl, cream together the butter and sugar until smooth.

Add the flour a little at a time while mixing to form a smooth dough. Knead the dough and roll into a ball. Wrap in clingfilm and chill for 20 to 30 minutes.

Preheat the oven to 180C and line a baking tray with baking paper. Once chilled, roll out the dough (1/2cm thick) and cut out cookie shapes. Use a small Christmas cookie cutter to cut out the centre of half of the cookies.

Place the biscuits on to the prepared baking tray and bake for 10 to 15 minutes (turn half way through baking). Once slightly golden the biscuits should be done.

Leave to cool before adding half a teaspoon of raspberry jam to each full biscuit and top with a cut out centre cookie to create a sandwich.
