Vegetarian Poke Bowl

Try this zingy summer poke bowl for lunch!


1 Bowl


200g Chickpeas roasted
1 Egg boiled
1 Radish sliced
1 Avocado pitted and sliced
1 Carrot grated
1 Red onion sliced
1 Tomato sliced
A handful of Spinach
1 Bell pepper sliced
1 Chilli pepper chopped


1 tablespoon Rice wine vinegar
1 tablespoon Mirin
1 tablespoon Soy sauce
1 tablespoons Orange juice


While the chickpeas are roasting, boil the egg in water for 6 minutes and prepare your veg.

In a bowl, whisk the dressing ingredients together.

Assemble the bowl with the ingredients, drizzle the dressing on top and sprinkle with sesame seeds.
