Follow these four simple steps for perfect Welsh cakes!
In a large mixing bowl, sift the flour, sugar, baking powder, mixed spice and salt and mix. Add the butter and rub into the dry mixture using your hands. Tip in the currants and mix.
In a separate bowl, beat the egg and milk together. Mix into the flour mixture using a fork, bring the dough together using your hands and add more milk if too dry. Heat a cast-iron skillet over a low/medium heat with a small amount of oil.
On a clean work surface dusted with flour, roll out the dough until 1cm thick, cut out as many round pieces of dough as possible. Repeat this process until all the dough has been used.
Cook the Welsh cakes on each side for 4 minutes or until golden brown. Adjust the heat if necessary. Transfer the Welsh cakes to a cooling rack and sprinkle with sugar.
Now this is a winter warming, cosy soup for the soul!
