Smooth vanilla yogurt topped with a homemade apricot compote.


450g Apricots
60g Sugar
1/2 Vanilla bean seeds scraped
Lemon zest
1 tablespoon Lemon juice
2 tablespoons Water


Remove the pits from the apricots by tearing the fruit in half. Add the pitted apricot halves, sugar, vanilla bean and pods, lemon zest, lemon juice and water to a saucepan and stir gently.

Cook on a medium low heat until the sugar dissolves and the apricots begin to release their juices. Turn the heat up to medium and gently simmer the apricots until they fall apart (around 10 to 15 minutes). Taste and add more sugar if needed.

Remove the vanilla bean pod and serve the compote on top of vanilla yogurt for a delicious dessert.
