Time to earn some avocado brownie points!

Ingredients

1 Avocado peeled and pitted
2 Eggs
30g Maple syrup
3 tablespoons Unsalted butter or organic coconut oil
1 teaspoon Vanilla extract
65g Almond flour
1 teaspoon Baking soda
1/2 teaspoon Sea salt

Instructions

Preheat the oven to 180C and line a brownie tin with baking paper.

Place the avocado in a food processor and pulse until smooth. Scoop the avocado into a mixing bowl followed by the cacao powder. Mix until you get a chocolatey paste.

Add the egg, sugar, maple syrup, butter and vanilla and mix until smooth. Stir in the flour, baking soda and salt.

Stir in the cacao nibs then spoon the mixture into the prepared brownie tray and bake for 30 minutes or until the top is set.

Leave to cool before cutting into squares.
