Preheat the oven to 180C and line and grease a loaf tin. Sift the flour and baking powder into a mixing bowl. Add the sugar and poppy seeds and mix.
In a separate bowl mix together the oil, milk, lemon juice (125ml) lemon zest (3 tablespoons) and vanilla. Pour the wet ingredients into the dry ingredients and mix until just combined.
Pour the cake batter into the prepared loaf tin and place in the oven for 45-55 minutes or until baked through.
In a clean bowl, mix the icing sugar and lemon together until it forms a thick icing. Once the cake is cool, spoon the icing on top. Top with some poppy seeds and lemon zest to serve.
These witchy fingers will put a spell on your taste buds!
