Plant-Based "Pulled Pork" Nachos

Preheat the oven to 200C, strain the jackfruit in a colander to remove excess water.
Heat a skillet pan over a medium - high heat, add oil and once hot add the jackfruit. Cook for 5 minutes and as the jackfruit softens, use the back of a spoon to mash up the jackfruit to resemble pulled pork.
Reduce the heat to medium, sprinkle onion powder, chipotle powder and salt over the jackfruit, stir to coat then pour the BBQ sauce on top. Mix and cook for another 5 minutes then remove from heat.
Lay tortilla chips onto a baking tray, spread the jackfruit on top, sprinkle with cheese, onion and tomatoes. Place in the oven for 10 minutes or until golden brown.
Serve with avocado and lime juice. Crumble vegan cheese on top. Mix cumin and salt into your chosen sauce (we've used a creamy garlic sauce!)
