Ah the classic chocolate chip cookie... Crispy edges, chewy middle, loaded with chocolate chips and vegan friendly!


55g Vegan butter
30g Caster sugar
1/2 teaspoon Vanilla extract
1 tablespoon Oat milk
100g All purpose flour
1/2 teaspoon Baking powder
5g Cornstarch


Preheat the oven to 180C and line two baking trays with baking paper.

Add the vegan butter and sugars to a large mixing bowl and mix until fluffy then whisk in the vanilla and milk.

Sift the flour, baking powder and cornstarch into the bowl, mix until combined then fold in the chocolate chips.

Divide the dough into eight equal pieces and roll each into a ball. Place them on the prepared baking trays with enough space between each cookie and slightly flatten.

Bake for 10 - 12 minutes or until golden brown (make sure you don't overbake!) Leave to cool and enjoy.
