Keep calm and curry on with this vegan curried chickpea burger!
In a frying pan, heat up 1 tablespoon of Coconut Oil and add the onion, carrot and coriander. Fry for 10 minutes or until softened.
Add the Basmati Curry Powder and fry for a minute or two (until fragrant). Meanwhile, use a food processor or blender (or hand-held blender) to whizz the chickpeas until smooth - you can leave the mixture a bit lumpy if you prefer to have a bit of texture! Add salt and pepper to taste.
In a bowl, combine the chickpea mixture and veg mixture. Shape the mixture into round burger patties using your clean hands.
Add extra oil to the pan, cook the burgers over a medium heat for around 7 minutes or until golden brown. Flip the burgers so they are cooked on both sides.
Serve in a burger bun with salad and your favourite condiment!
