Boil the carrots until tender. Mix the soy sauce, apple cider vinegar, water, maple syrup, paprika, garlic powder and pepper to a large bowl.
Add the carrots to the marinade, toss the carrots in the sauce, cover and place in the fridge for 24 hours.
Drain the carrots and cook until each side is golden brown. Pop in a bun and serve with your favourite toppings.
