You'll certainly eat all your greens when you have this buddha bowl for lunch!



128g Quinoa
1 Kiwi sliced
1/4 Cucumber sliced
1 Avocado sliced
1 Apple sliced
A small handful of Cress
1 Lime sliced
A handful of Kale de-stemmed and chopped
120g Edamame


1 Avocado
128g Fresh parsley chopped
65g Fresh basil chopped
2 tablespoons Chives
1/2 Lemon
2 Garlic cloves
1 teaspoon Dijon mustard
120ml Water
Salt to taste
60ml Aquafaba



Cook the quinoa according to package instructions and fluff with a fork and set aside.


Pop the dressing ingredients into a food processor (except for the aquafaba) and pulse to combine. Slowly add the aquafaba while pulsing.

Place the salad ingredients into a bowl, add the dressing and sprinkle with sesame seeds to serve!
