Packed with goodness, filling and oh so hearty, this vegan Mexican bean soup is packed with nourishing ingredients!


2 tablespoons Rapeseed oil
1 Onion diced
1 Red pepper chopped
2 Garlic cloves diced
2 teaspoons Chilli powder
1 teaspoon Ground coriander
1 teaspoon Ground cumin
400g Chopped tomatoes
1 teaspoon Nutritional yeast
A handful of chopped Coriander
1 Lime juiced


Heat the oil in a medium pan, add the onion and pepper and fry, stirring frequently, for 10 mins. Stir in the garlic and spices, then tip in the tomatoes and beans followed by the nutritional yeast. Simmer and cover for 15 minutes.

Serve with fresh coriander on top, vegan cheese (optional) and a squeeze of lime juice.
