Throw any root vegetable into this dish, toss in a simple homemade dressing and top with a poached egg and you're ready to rock 'n roll!

Ingredients

Veg

100g Butternut squash peel & chopped
100g Parsnips peel & chopped
100g Carrots peel & chopped
100g Courgette chopped
50g Broccoli chopped
1 tablespoon Olive oil
1 teaspoon Crushed chillies
2 Eggs

Dressing

1 tablespoon Lemon juice
1 tablespoon Maple syrup
1 tablespoon Olive oil
Salt to taste

Instructions

Veg

Preheat the oven to 200C, heat one tablespoon of of oil in a frying pan, add the veg and season with crushed chillies, salt and pepper. Cook for 5 minutes until the edges begin to brown then transfer to the oven and roast for 20 - 25 minutes until tender.

Dressing

Place the dressing ingredients into a bowl and whisk together. Taste and season with salt.

Serve the veg tossed in the dressing with poached eggs on top!
