Here's how you bake a sweet potato to perfection and fill it with a flavour game changer!
Preheat oven to 220ºC or 200ºC for fan assisted ovens. On a baking tray, prick sweet potatoes all over with a fork. Bake until tender, 45 to 50 minutes. Let cool, then split the tops open with a knife and top with a pat of butter. Season with salt and pepper.
Put the quinoa into a sieve and wash well under cold running water. Tip into a saucepan and pour in 400ml cold water and a pinch of salt. Bring to a boil over a medium heat, then reduce to a simmer over a low heat and cook gently for 10-15 mins until the quinoa is fully cooked and all the water has been absorbed. Remove from the heat, put on a lid and leave for 5 mins. Add a drizzle of Garlic and Rosemary Oil then fluff up with a fork.
Top the baked potatoes with quinoa, crumble feta on top, sprinkle with pomegranate seeds and serve with fresh rocket.
