Get the whole family eating healthy veggies with this wonderfully rich, authentic Balti curry... The best thing about this recipe? You can chuck any veg in AND you don't have to spend hours over a stove just pop it in the oven and you're good to go!
In a pan, add the oil, onion, garlic and the Balti Curry Powder. Mix together over a medium heat until the onion is translucent.
Preheat the oven to 200C, add the onion mixture to a baking dish followed by the vegetables, tomatoes, puree, salt and water. Mix to combine and bake for 35 - 45 minutes.
Make sure the cauliflower and sweet potato are cooked through then remove from the oven.
Serve with rice, garnish with fresh coriander and squeeze lime juice on top!
