These gnocchi stars are served with a vegan creamy mushroom and cranberry sauce!



300g Potatoes
100g Flour


200g Mushrooms sliced
1 tablespoon Butter



Peel, cook and mash the potatoes. Mix the flour and salt into the mashed potato and knead for 1 - 2 minutes until well incorporated.

On a clean work surface that's lightly dusted with flour, roll out the dough (around 0.5mm thickness) and cut out star shapes.

Heat water in a pan and bring to a boil, carefully add the gnocchi and cook until they float to the surface (less than 1 minute). Repeat until all the gnocchi is cooked.


Heat some oil in a pan, add the sliced mushrooms and sauté until cooked. Add the butter and mix to melt.

Sprinkle in the cranberries and add more butter to make the sauce creamier. Add the gnocchi to the pan and mix.

Season with salt and pepper to serve.
