A rich and comforting sausage ragu submitted by one of our followers!


1 Onion peeled & chopped
2 tablespoons Olive oil
1 teaspoon Crushed chillies
4 tablespoons Smoked paprika
2 teaspoons Garlic powder
1 teaspoon Ground cumin
2 Garlic cloves minced
8 Sausages skin removed
100g Bell peppers chopped
100g Carrots chopped
150ml White wine
200ml Chicken stock
400g Chopped tomatoes
400g Pasta


In a saucepan, use a tablespoon of oil to fry the onion until soft, then add the crushed chillies, smoked paprika, garlic powder, cumin and garlic then fry for a minute. Remove from the heat and scrape into a bowl.

Add a tablespoon of oil to the pan with the sausages, cook until golden brown then break them down with a spoon. Add the onion and spice mixture a long with the carrots, bell peppers and wine. Bring to a simmer and leave to bubble gently until half the wine has reduced. Add the tomatoes and stock and simmer for 10 minutes.

Season with salt and pepper. Meanwhile, cook the pasta according to the pack instructions. Drain but reserve some of the cooking water, stir the pasta through the sauce adding some of the water. Serve with parmesan.
