Place the potatoes in a large pan, cover with water, bring to a boil and cook until parboiled (around 6-7 minutes). Drain and leave to cool.
Finely shred the potatoes using a grater and use a paper towel to drain the potatoes of water.
Place the shredded potato in a large bowl, stir in the flour, garlic powder, onion powder, oregano and dill; season with salt and pepper to taste then form the potatoes into equal croquette shapes.
Heat the vegetable oil in a pan over a medium heat, add the croquettes (5 or 6 at a time) and cook until evenly golden and crisp (around 3 - 4 minutes). Transfer to a paper towel, serve with your favourite sauce and garnish with chives or chopped parsley.
Now this is a winter warming, cosy soup for the soul!
